Marks and Spencers

At huge Marks and Spencers (clothing and food department store) in the centre of Manchester. Stood in the entrance with big group of people. Frankie (ex girlfriend) is there. i try to make eye contact but she is wearing dark blue glasses. She seems happy, and is talking on the phone with her side to me. Her hair is slightly lighter than i remember.

All of a sudden everyone disappears into the store. I try to follow her but can't, running around looking in all the sections to no avail. I am carrying some ballons, trying to bounce down stairs with them taped to the underside of my shoes.

Stood in queue, doing star jumps holding ballons infront of little girl. Paddling pools are discounted.

If her hair being lighter means that there's just less of it...
then perhaps that's how she is punished in the dream for rebuffing your attempt at eye-contact & friendliness. Considering that she's your ex and that you're occupied with balloons, star jumps, impressing a little girl & catching the (discounted) price on paddling pools...perhaps you want / are reminiscing about a past when you were younger and balloons interested you more than bongs.
You're getting younger in the dream...and unfriendly Frankie is going in the other direction and getting lighter hair.

lighter colour

What a shame...it was all making such good sense.
Oh well, let's see, Frankie has still changed, getting lighter coloured hair can either be appealing to you (which would explain your following her doing all those acrobatics & carrying all the gifts that you are--realizing however at some point that they are more suitable for impressing a kid than a already hard to reach adult like Frankie)...
...OR lighter coloured hair means that it is going in the direction of white...for which see the previous entry.

i prefer darker hair, black, purple and chestnut, auburn etc.

Ok Adam, this is my FINAL try on this dream, so don't go ruining it for me again!!!

Frankie is your ex-girlfriend, her lighter coloured hair is moving away from the side of the spectrum which you fancy...sooo that means your attraction towards her in that respect may be reducing a notch.
HOWEVER, as our hearts have a way of yearning, you may still want some level of nearness with her because of which you go to the trouble you do in the dream (may also just be old-fashioned curiosity)...but at some point the whole thing dilutes & evaporates into light-heartedness.
I think it's time for me to actually coin some phrases here: i'd call it the "emotion bubble" that comes and goes--a fleeting feeling (positive or negative) that arises in us for people that have crossed, and left an impression, on our lives.
